Feijoa compote and cream sponge cake

There is a reason for icing… to cover up imperfections. Even cakes have blemishes though no fault of their own. I love how Micah described the cake as “rustic”! I used Nigella Lawson’s Victorian sponge cake recipe, but instead of filling it with strawberries/berries and cream, I sandwiched the layers with a feijoa compote and cream.

Happy Birthday Hayley!! Can you feel it? The tingling sensation of excitement… you’re going to have an AHHH-MAZING year. Remember to be good to yourself – eat more!
